Egg-Free Wacky Chocolate Cake
A Depression-era classic that uses a chemical reaction between vinegar and baking soda to rise, requiring zero eggs or dairy.

Ingredients
- 1 1/2 cups all-purpose flour (or GF 1-to-1 baking flour)
- 1 cup sugar
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp white vinegar
- 1 tsp vanilla extract
- 1/3 cup vegetable oil
- 1 cup water
Instructions
Preheat the oven to 180°C (350°F). Grease an 8x8 inch square baking pan.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
Make three wells in the dry ingredients. Pour the vinegar into one, the vanilla into another, and the oil into the third.
Pour the water over everything and mix until just combined (do not overmix).
Pour the batter into the pan and bake for 30-35 minutes until a toothpick comes out clean.
